The farmers market is lined with people who have sweet corn to sell and the lines to buy, are even longer!

Growing up, we would make a meal out of sweetcorn which usually involved 3 ears each, a lot of butter and salt. Mom would always fix something with it like burgers or ham and we’d have tons leftover! Between us 4 girls, our eyes were always bigger than our stomachs so what to do with leftover ears?!

I found this recipe on Pinterest  — what did we do before it? I haven’t tried it yet but I’m dying to because it has all the summer veggies I love and it feels like it’s more of a complete meal without all the butter and salt, even if that is the BEST part!
